New Favorite Cheese

I have found a new love: Truffle Tremor Goat Cheese@ Lotsa Pasta. Heaven, pure heaven. Pricey, but it is so rich that a little goes a long way. If I hadn't completed my Christmas shopping, this is what I would be giving everyone, but my grandchildren. :D

It's an aged cheese. It is made by Cypress Grove Chevre which also makes Humboldt Fog.

Yeah, Cypress Grove is a great American cheese maker. So is Point Reyes.

My only problem with Humboldt Fog is shelf life. It starts to turn kind of waxy from the rind in after only a couple of weeks, and if you can't get fresh product, I don't think it's as good. However, when it's fresh it's awesome ... I've done a Humboldt Fog - Morbier side-by-side and liked the California cheese better.

I would recommend Beemster XO Aged Gouda. Anything made by Beemster, actually!

Capriole O'Banon wrapped in Bourbon-soaked chestnut leaves. If you really want to rock it, put it (still wrapped in the leaves) on a cool part of the grill or in a 375 oven for five minutes or so right before serving ...

I agree with Corey- anything Beemster ( Though my favorite is the 18 month aged).

Capriole St. Francis and the O'Banon. Kenny's Blue Gouda. Sapori d' Italia fresh goat cheese buttons ( Rainbow Blossom and Lotsa both carry this; Farmer's market tomorrow) with Blue Dog bread. Non-local one of my favs is the Point Reyes Blue from California.
