I made this over the weekend for my family's annual rib cook-off...There were only crumbs left. Many people asked for the recipe, and I was almost embarassed to tell them just how easy it was. It can easily be doubled to serve large crowds, and would be perfect for a bake sale.
2 cups cookie dough (store-bought, or home made will do nicely)
1 egg
1/2 cup sugar
1 8 oz block cream cheese
1 tsp vanilla extract
In an 8x8 inch pan, press half of the cookie dough. Mix cream cheese, egg, sugar, and vanilla, and pour over dough. Onto that, crumble remaining cookie dough. Bake at 350 for 35-45 minutes, or until a toothpick inserted into the middle comes out clean. It's delicious and idiot proof!
