Easy, sinfully delicious dessert

by Michelle R. » Tue Aug 07, 2007 12:29 pm

I made this over the weekend for my family's annual rib cook-off...There were only crumbs left. Many people asked for the recipe, and I was almost embarassed to tell them just how easy it was. It can easily be doubled to serve large crowds, and would be perfect for a bake sale.

2 cups cookie dough (store-bought, or home made will do nicely)
1 egg
1/2 cup sugar
1 8 oz block cream cheese
1 tsp vanilla extract

In an 8x8 inch pan, press half of the cookie dough. Mix cream cheese, egg, sugar, and vanilla, and pour over dough. Onto that, crumble remaining cookie dough. Bake at 350 for 35-45 minutes, or until a toothpick inserted into the middle comes out clean. It's delicious and idiot proof!

Michelle, this sounds like an cheesecake/cookie combo? I'm I on the right track? What kind of cookie dough did you use? I would think any type would work, but I'd like to know what you used since it was such a hit with your family!

Yes, it tastes exactly like a cheesecake/cookie combo. I used regular Pillsbury chocolate chip cookie dough. Granted, it would probably have been a bit better with home made dough, but I just didn't have the time. I certainly didn't hear anyone complain. ;)

We made 2 versions for Sunday dinner today - chocolate chip and fudge brownie; we used store-bought dough for both. They were great! I think I preferred the brownie version but both were mighty tasty!

I made this dessert yesterday and brought it to work today. Everyone loves it. I made homemade cookie dough. I tend to over mix my dough because I do it by hand so it was too runny to crumble on top. So, I just made some cookies on the side.
