Tailgating Tricks or Tips

This coming Tuesday, I have to teach a class on Tailgating tricks and have a few good ideas mostly based upon my catering experience, but I'm looking for any other ideas or tried and true crowd pleasing recipes that I may not have though of. As usual, I have waited to the last minute to get my presentaion togeather so any helpful hints are greatly appreciated.

Dan,

Mario Batali has a new cookbook out that's about tailgating - turnsout he's a big Nascar fan. It's called Mario Tailgates NASCAR Style

You might want to try flipping through it for some suggestions/hints. I haven't read it but I've always found his recipes/hints to be very good. Deb

No grill set up

Keep it simple unless you do it the night before.
If you have a bar, have a theme drink.
Cooler full of assorted beers on ice.
Table for service area BYOChairs.
Crock pots transport a keep warm food the best.
Soups or chili, garlic mashed potatoes, baked beans, pulled bbq for sandwiches, sloppy joe stuff, etc.
get them hot, load them unplug and go.

Don't forget: Soft Drinks, napkins, PPlates, utensils, buns, cups and more ice.

We don't "tailgate", but we do travel quite a bit. With three big dogs, too.

Our best idea to date has been packing a "Utility Box". This could be useful too when tailgating. Pick a box or lidded plastic container big enough to hold paper towels, multi-surface cleaner, cooking and eating utensils, and so forth.

I fill a gallon-size zippered bag with various sizes of plastic bags and trash bags inside. This would also be a good way to keep your seasonings, salt & pepper, etc. together and handy.

Mark the container conspicuously so it's easy to spot when you have a spill or need to clean up.

When we travel, we try to always keep the Utility Box in a spot where it's easy to find. You don't want to bury it under a bunch of other stuff.
