Fake caviar

{ POST_BY_AUTHOR } Carla G » Sun Sep 22, 2013 10:10 pm

My daughter was telling me of a fish product she was introduced to in London. It was a fake caviar of sorts. Medium sized, roe- like pellets, black but without the luster or luminescence of caviar. She said it was, ummm, OK but lacked the bite of good roe. Made from fish but wasn't sure what parts. Sold in tiny jars even smaller than typical caviar jars. She could not remember the name. Has anyone ever heard of such a thing?

Napa River Grill had an awesome "caviar" on a meatless dish during 502 week, and I expect they use it in other stuff. Tiny caviar-shaped, salty-sweet balls of ... balsamic that had been through some kind of simple molecular gastronomy process.

Lemme see if I can find a picture of it ...

And here is one way to get there. (I don't know if the Napa kitchen used this approach or another.)

Yeah, I sent her this link
http://www.luxist.com/tag/fake+caviar/
But she said it was similar but thought the product was made differently.
