First off, I am bragging on Meridian Cafe's "Sous Chef" Steven Coke for being accepted/accepting an internship from Sullivan University to Corbett's An American Place!

From being in many kitchens I have noticed that the interns do little more than grunt work and don't really learn a lot in some of them.

Dean and Jack Frys with Shawn Ward are the two places that I would want someone to be. Should learn a lot. I am sure there are others, but those are two I know will teach.

I looked at the web site that your son is going to and it looks great. Being exposed to something different is always a good thing.

Great news- congratulations to both the guys.
A new cook cannot intern for a better restauranteur than Dean Corbett. There is grunt work to be sure, but nothing that the full timers don't do, but also lots of real line work.
