So is anyone else getting inundated with spam from "Merts Cakes by Virginia" supposedly the home of the official Kentucky Derby Cake?

Yes, For their holiday Cakes? yes, I have been getting lots. I wish I was getting as many cakes as I am emails.

There not bad, I actually do receive at least one every holiday season, and I find myself sending them too.

Me too. It's great for camping or backpacking. No need to refrigerate, full of salt to help with electrolyte loss, and slices fry up really quickly.
