2nd Annual Derby Night Event
Silks in the Bluegrass Features Folk Music Star Judy Collins and Celebrity Chef, Thierry Miroir

Benefitting Operation Open Arms, Inc., the event offers a relaxing evening of cocktails and dinner after the races with a special performance by Grammy-winning artist, Judy Collins
Louisville, KY – Operation Open Arms, Inc. a Louisville, KY based not-for-profit organization founded by Cathy and Irv Bailey will host its second annual Silks in the Bluegrass Derby event at the Crowne Plaza Louisville on the evening of Saturday, May 1st, just following the Derby races. The event will begin at 7:30 p.m. with dinner being prepared by French chef, Thierry Miroir, who was the executive chef for the late King Hussein of Jordan and Queen Noor.
Following a career as executive chef at Le Savarin in upstate New York in the 1980’s, where he received the highest rating, 3-star, New York Times review, and before that 20 years of private chef service for Kings, Queens and other dignitaries from France, Uruguay and Tunisia, Chef Miroir is based out of Palm Beach, Florida where owns a bakery and gourmet shop called Blue Provence. Chef Miroir will be attending the Kentucky Derby for the first time, where he will also be a special guest. He will be assisted in preparing the Silks in the Bluegrass gala dinner by Executive Chef of the Crowne Plaza, Paul Sant.
As the featured entertainer for the evening, Judy Collins has had a career in the music business for more than 40 years. Collins’ most well-known ballad, “Send in the Clowns” written by Stephen Sondheim for his Broadway standout, A Little Night Music, won her a Grammy award in 1975. Since then, Collins’ has gone on to perform as a folk artist around the world, appearing at Wolf Trap in Washington, DC, at theatres and arts centers around the United States and making media appearances on ABC’s “Good Morning America,” National Public Radio and many others to talk about her career in the entertainment industry and her book, “Sanity & Grace.”

This Derby Night event takes place at the Crowne Plaza in Louisville, 7:30pm, and this year will feature a wonderful dinner by Chef Thierry Miroir of Palm Beach, FL. Chef Miroir was previously ‘in service’ with the late King Hussein of Jordan and Queen Noor. He also was formerly the Executive Chef at Le Savarin in upstate New York. He now resides in Palm Beach, FL where he is semi-retired and owns a gourmet French pastry shop. This is his first Derby experience and we are excited to have him! He will be preparing a Middle Eastern-flavored meal, featuring lamb.
