Cuban food is pretty carnivorous, Charles, but I notice that Havana Rumba's menu is vegetarian-conscious and has a number of good-looking dishes that it specifically earmarks as meat-free.
Here's the online menu
Maybe it will give you and your friend some ideas? These all look good:
Ensalada Tropical - $5.99
Mixed greens, mango, orange, papaya, avocadoes and caramelized Spanish walnuts.
Ensalada Española - $5.99
Mixed greens, Spanish olives, roasted pimentón, manchego cheese and marcona almonds.
Mima’s Frijoles Negros - Cup $2.50 or Bowl $3.50
The Chefs mom’s recipe. Expertly prepared black beans stew. 100% vegetarian. Topped with diced raw Spanish onions.
Pinchos Vegetarianos - $9.99
Vegetable skewers, grilled and brushed with mojo criollo sauce. Served with black beans, rice and sweet plantains.
Cubano Vegetariano - $9.99
White rice, Cuban black beans, yucca con mojo, sweet plantains and spinach empanada.
