Eggs Benedict

My husband loves eggs benedict. We have a kid free weekend so I would like to take him to breakfast or brunch on Sunday morning. Who has the best?

Wild Eggs has a nice Southwestern variation that I liked a lot - review from shortly after the first opening, so details may have changed, but I'm pretty sure it's still on the menu at both properties:

Kalamity Kate’s Border Benedict ($9.95) adds a Tex-Mex touch to the breakfast classic, perching two perfect poached eggs atop a pair of mild, sweet corn cakes studded with green chiles and topped with crumbled chorizo sausage; it’s topped with a creamy, cheesy “queso fundido,” a toothsome alternative to the classic Hollandaise, and garnished with a tangy pico de gallo made with bits of avocado.

Danish Express also has a Benedict-like dish that's not the classic but sure was good:

The Brown Derby with one egg and bacon ($5.50) featured a well-poached egg, hot but not hard at the center, atop a thick slice of good homemade white bread, covered with a light cheese sauce. Two pieces of crisp bacon, iceberg lettuce and a thick slice of tomato sat on the side.

Proof's take on Eggs Benedict is a revelation, in my opinion. They use what I assumed to be a pan-fried grit cake as the carb-filled base, rather than an english muffin. Very very yummy.

I love eggs bennie and can no longer eat the original recipe because of Wild Eggs' creation. I also like Proof's. (Small portions; hefty prices.) Broken Egg in the Panhandle of Florida is as good if not better than Wild Eggs. Their location at Grayton Beach is the one we go to.

Soft-fried egg on a pan-seared grits cake is an amazing combo. My wife independently created it at home (we've never tried Proof's), although she does skip the Hollandaise step. (The grits cakes are really easy - she makes a thick batch of Weissenberger Mill grits and pours them into a Heine Bros. coffee cup, keeps it in the fridge overnight, then pops out the mold in the morning and cuts it into thick slices, ready to hit the skillet.)

Our guests enjoy our version of Eggs Blackburn. English Muffin, fried green tomato slice, poached egg, sometimes topped with cheese, sometimes with Hollandaise and then a sprinkle of smoked paprika. Of course, you'd have to spend the night . . .

Totally agree with Robin on Wild Eggs. Kalamity Kate's Border Benedict is one of the best things I have ever eaten. I actually have had dreams about that dish...
