Preserving Desserts for Display

Okay I was wondering if anyone new how to preserve desserts for like a dessert tray so they don't get moldy like cheesecake or just overall sorry looking. Any ideas or products that you can think of?

Faux foods

There are fake foods made for display purposes that may suit your needs. I know they had these things back in the early 1990s when I worked for Pizza Today magazine.

I was surprised to see that eBay has a whole category dedicated to "fake food":

Home & Garden> Food & Wine> Fake Food

I would also suggest doing a Google search on "faux +food +display".

I've always been tempted to use spray shellac. Our daughter is a stage manager and she has shellaced foods that were props when she needed them to last for a couple of weeks . . .

I might have to actually try the shellac thing. I wonder if there is a best to use. I first thought wax but I think it would dry hazy.

The product that works best is gelatin. Use clear gelatin and either dip item in the gelatin or take a brush and paint it own. Also adding some citric acid will prevent the food from discoloring.

If you have seen food competitions in which hot food is displayed cold it is gelatin covering the food.

Sometimes shilac can give items a hard fake look . Gelatin looks natural.
