You can buy Cafe du Monde beignet mix around town. I think World Market, Liquor Barn, and Valu Market have it.

I would try Selena's. They are light and crispy, I've always found the Fish House a little heavy and greasy. But its all good. Fried dough is da bomb.

FYI. I found that Beignets don't keep/travel well, so if you are buying them pre-made, get them as close to serving time as possible.

I agreed that the ones they make are excellent! They always have them for their Sunday brunch and hopefully they will have them on Fat Tuesday when we're there for the gathering!

Several years ago, DH and I were at the Harvest Homecoming and there was a booth making and selling beignets.. The strangers walking in front of us suddenly exclaimed, "Oh look! Beg-nets. Let's get some." We chuckled and said, hey let's try them.

Unfortunately, they really were beg-nets.

burned, grease-laden lumps.

So now we are careful to differentiate beignets from beg-nets.

Beignets are surprisingly easy to make and there are some great recipes online floating around. Since they do not travel/keep well, as Justin has indicated, making them yourself guarantees freshness! Give it a try! :D

Quick and easy reasonable facsimile beignets.
Throw a couple of par-baked Sister Shubert rolls in the fry-o-later.(For you trying this at home, get the ones in the bag, not the aluminum pan.)
Cook for a couple of minutes.
Cover in powdered sugar :D
Not as light as a true beignet, but pretty darn tasty none the less!

732 Social makes some nifty beignets. Not sure if they would travel well.

If you go to Meijer on Preston you'll likely find this expired & can probably get it free if you ask the gal/guy at the register. It has worked for me twice so far. :)

Beignets don't travel well, because they are fried dough.
They lose the crisp hot deliciousness from the fryer as they cool.

The easy way to make your own is to use canned biscuits (the light flaky layered variety), simply cut each biscuit in half and fry in oil until golden brown, then toss the fired dough balls in a bad of powdered sugar.

One of the first chefs at Rockwall used canned biscuits for their beignets.

Choux pastry to be exact.
