The Process...

Check this out! This particular drink, in it's final form, will be finding it's way to Manhattan, NYC, for the Bourbon, BBQ and Beer Festival. A great opportunity for Louisville to spread her wings amongst the eagles!

Varanese deserves special mention for thier participation. Dave A, Chef and crew were quite the willing participants in my little science project!

BTW... Tom Fischer is the beast! There is no more ardent and consistant suporter of the craft in the region...

First things first, great work as always. My question is with the BBQ sauce, if it is a bourbon festival why not use a bourbon (Jim Beam) BBQ sauce?

If you haven't tried it, it has an entirely diiferent flavor profile than than the JD Honey BBQ, so while I also initially wondered at Stephen's choice- it makes alot of sense., cause he's all about the way thing's taste.

Loved the video- fantastic job!!!! ( and you looked great too :wink: )

If you haven't tried it, you may want to check out the Buffalo Trace BBQ sauce in this recipe some time. It's got that great Bourbon/honey flavor ( not tomato-y). I tried just about all of the Kentucky Bourbon BBQ sauces 5 years ago when I was working on a private label for one of them, and this one remains my fav ( even though it wasn't the clients brand :oops: ).

Congrats, and hope to see much more of you on the Tube!

I haven't had either, so I was just asking. If you are doing a bourbon festival you have to go with a bourbon sauce. I didn't know Buffalo Trace did a BBQ sauce, but I had seen Beam in the stores. It's Stephen's drink and he can do as he wishes, but a bourbon based sauce seems like a no brainer.

The Buffalo Trace sauce is available at their gift shop at their distillery in outside Frankfort. It's been a couple of years, and it may be available on-line or at Taste of Kentucky now. Personally I don't care for the Beam sauce at all- watery and doesn't have a great bbq flavor- but I lthen again I fike my BBQ sauce ( and my Bourbon) with a sweet vanilla profile.

I LOVED watching this (in part just because I love any opportunity to see sweet Stephen), but I should offer a word of advice to anyone watching the video... If your computer pauses repeatedly making it almost unbearable to watch, if you lower the volume, open a new window, and carry about your business until it's over, the second viewing is uninterrupted. I noticed this with some silly video my brother posted for me on u-tube recently. Can be very frustrating, but it just requires the "once over".

As far as the cocktail, I don't like bourbon so I'm screwed until I condition the buds. Still working on them...

Great video! And NOW I know what David A. looks like!

Furthermore.. this cocktail sounds especially tasty!




But for the sake of the notion of refinement...


A few thoughts/ideas:

-Flamed orange peel to finish?

-Egg white/egg white powder with the beer to create a more stable, frothier foam?

-Bacon-infused bourbon? - you have acid, earthy, bitter and sweet - what about a fat balance for body and to play off the BBQ aspect of the drink?

-What about breaking down the elements of the BBQ... smoke, sugar, acid, spice, tomato, etc... and adding them in separate elements for greater flavor control?

-Smoked spirits? Smoked mixers?

-What about bourbon barrel-smoked salt as an contrasting element?

And just for the hell of it... what about tobacco infusion again?
