Seviche's Lamas takes "Gusto Latino" concept to Beard House

We are proud to announce that Anthony Lamas of Seviche has been invited to be a guest chef at the James Beard House in New York City. The dinner will be held March 16, 2010 and will be his fifth visit to the venerable establishment.

Chef Lamas has crafted his special menu around the “Gusto Latino” Wine Dinner Series that has been ongoing at his restaurant for almost two years. In conjunction with Dave Dubou of Vintner Select, Chef Lamas has been working his way through the countries of Latin and South America with one feature dinner a month. Chef Lamas builds a creative menu around the culinary traditions of one of the 27 Latino nations and Dubou expertly pairs the menu with wines from around the world. Each dinner features in-depth commentary and discussion of the food and wine.

Chef Lamas has selected dishes from nine of the previous wine dinners to make up his menu for the special dinner in New York on March 16th. Dave Dubou will be accompanying him to the James Beard House to pair those dishes with wines.

Bocaditos
Mexico: Halibut Seviche- Orange, Jalapeno, Jicama

Peru: Chicken Liver Anticucho- Veal Glace, Vidalia Onion, Chipotle, Smoked Bacon
Puerto Rico: KY Bison Empanadas- Green Olive, Sofrito, Mint

Honduras: Tuna Seviche- Coconut, Sesame, Red Chile

1st Course

Colombia: Arepa- Roasted Berkshire Pork, Tomatillo, Queso Fresco

2nd Course

Cuba: Black Bean Soup- Manchego, Smoked Bacon, Crema

3rd Course

Brazil: Moqueca- Dry Scallops, Mussels, Shrimp, Coconut, Lime, Dende Oil

4th Course

Argentina: Churrascos- Skirt Steak, Chimichurri, Fingerling Potatoes

Dessert Course

Guatemala: Banana Frita- Dark Rum, Dulce de Leche, Vanilla Bean
