This is one subject I am sure others might chime into, as the shift gets later into the night is when there could be more of an error on the restaurants part unfortunately, unless you are keeping up with the flow of the dining.
If memory serves me I believe an article was written ( Marsha maybe ? ) on this situation or at least pertaining to events as dining stations being closed and cooks starting to clean up their stations also as business dictates.
For everyone in this business your first and last tables are sometimes your most critical being that you are getting the machine rolling in the morning or afternoon and then you are slowly coming to a halt in the evening, making sure all guests are enjoying themselves and resolving employee wants and needs also.
The obvious is to have several key staff members or management that are making sure that all guests that are visiting you after your normal dinner seatings are monitoring the dining room to ensure customer service. And of course those employees are rewarded with "preferred" stations and other benefits usually.
I think that most of us have been affected by this somewhere down the road, but I am sure Mojito's will read this topic and adjust accordingly
