catering per head

Hey, I need some help. A young couple want to book my restaurant next May for their wedding rehearsal dinner. They want a greek buffet. How do I go about charging them? Per head? If so, how much do you think? It will be for 75 people. Any help appreciated.

Per head definitely. And take into account what you'd normally be making in a typical evening at your restaurant.....
