Tea Question

Since January is National Tea Month, I am gathering together information on chefs or individuals that implement tea in a recipe, whether it be sweet or savory. I'd like to include this information in an article I'm writing for the Speciatly Coffee Association of America. So if you use tea in any way and in any form, send me a e-mail or just post it on this site and I'll be sure to use it.

I've made green tea ice cream and Earl Grey sorbet. I've had a tea poached duck breast dish - but I didn't make it.

Mary recently read an article (NY Times?) about prunes - I guess they're called dried plums now - poached in oolong tea until they're plumped up and juicy. We thought they were okay, but you couldn't really taste the tea.

Dear David,
Though Anoosh is not currently "using " tea in the kitchen, he truly could not live without it. A daily ritual of drinking tea in the afternoon is one of the most refreshing parts of our days. Persian drink enormous amounts of tea, and seem all the better for it! Hope to see you & Joyce soon! :D
