I'm wondering how others, especially servers and chefs, perceive special order instructions. I am 'one of those' who likes things the way I like them, like Sally (When Harry Met Sally). Ok, not that bad, but I tend to want certain things on the side, or extra sauce on the side, etc. Example, I am looking at Palermo's menu, and I'm thinking I'd like the Parillada with Beef, which is served on a bed of fries, and drizzled with chimichurri. I would prefer to have my fries on the side, so they don't get soggy, and I've heard so much about how good their fries are. I would also like extra chimichurri cuz I love the stuff, and I'm also a dipper. Is this considered too high maintenance, bad manners, or an insult to the chef?
