Smoked Kentucky Paddlefish- lightly smoked, sauté finish, citrus sun-dried tomato beurre blanc, rice and vegetables

Black and Blue Kentucky Bison. blackened eight ounce Kentucky bison rib eye, melted blue cheese . Truffle mash potato and vegetables.
