Turkey Stock

by David Lange » Wed Nov 25, 2009 12:59 pm

My wife has given me the title of sous chef for this year's Thanksgiving dinner. One of my duties is to find some turkey stock. We found it at Fresh Market 3 years ago, but have not found it since. I know it's a no-no to use store-bought stocks, but it was pretty good. The product is made by Kitchen Basics, who also make all other kinds of stock. Any help would be appreciated. I have to have it by 9 p.m. or I get replaced.

I have never seen the turkey stock, but the Kitchen Basics Unsalted Chicken Stock is pretty good and is what I usually use to supplement the turkey drippings in making Thanksgiving stuffing.

Really, for stuffing, gravy, etc., I wouldn't hesitate to substitute any good chicken stock for turkey stock, particularly with the help of the turkey drippings to boost it up.

I would give bouillon cubes a wide berth, though ...

Robin, I'm with you.....Alan made a stock pot of stock from a hole chicken we had for dinner on Sunday....put in the onions, celeary, a bit carrot, and a pinch of Old Bay (it's the New England yankee in him)...but when he doesn't have fresh made, the Kichen Basics Unsalted is pretty good and gets the chef's approval
If life's a Banquet, what's with all the Tofu?

Cheers!

I was just in Burger's Market an hour or so ago. And I noticed that they have the Kitchen Basic's Turkey Stock. It's on the top shelf of the soup section. But you'd also be fine with chicken stock as suggested.

FYI....Burger's closes at 7pm.
