Sheltowee Farm has wild-foraged chanterelle mushrooms!

Hi everybody --

Wanted to let the chefs and restaurants know that we have had a great couple of days foraging wild chanterelles. We have a good amount and would love to get them to you. I will be in town Friday, Saturday, and Sunday for a swim meet at U of L so if you would like some, please get in touch with us!

Watch for them after Friday -- L&N, Limestone, and Oak Room should have them.

The chantrelle's are beautiful, beautiful, beautiful!
Seriously some of the nicest, cleanest chantrelle's I've seen in a long time.

Oh yeah!

Here's how we're using it:

CELEBRATION OF DUCK
moulard duck breast, smoked duck confit, duck egg
collard greens, blis 9 braised pearl onions
chantrelle mushrooms, cherry

Ethan --

So glad you enjoying the chanterelles! They are my favorite mushroom.

We took our scissors into the woods with us to make sure and trim the stems and try to keep them as clean as we could. They are so fun to find -- you can spot groups of them from quite a distance.
