I hope you're not mocking me Chef. My 15 year old son and I eat at your restaurant and we love it. I've always wished you and any other new restaurant in town success. Hopefully these are the right people to run this property.

Not at all directed to you Dave. As I said on this board, I know you were doing good things over there. I am sort of joking, but at the same time, always looking for other oppurtunities.

Peace!

For a short while, I was the chef when the building was @tmosphere. They had gotten into some heat over the proprtion of food sales to liquor with the license they had and hired me to get the food sales up. I had built up a pretty nice lunch business averaging about $1200 to $1500 a day and then 4th Street opened and killed off their bar business.
I came to work one day and found the place being shuttered with no notice.

Isn't it funny that after Fourth Street opened and did ok you didn't hear much from Tom Owens and our Mayor about all the problems the Baxter avenue bars cause.
I used to play at Nio's and always thought it could be a hip little place. The food was good, but it is hard to compete with the rat (or should I say frat) mazes of Malone's and the other "Irish" bars on the block.
I don't think many of the people that come to Baxter at night have food on their mind. Probably the best thing that the "Nio's" location has going for it are the twenty or so parking spaces it has.

We were big fans of Nios (and Chef Dave's food). We often came in with 6 or 8 people and sat at the couches in the front lounge area and sipped drinks and shared small plates. It was a great way to start a weekend evening. That, plus, like I said before on this thread, I think it had the best and most interesting bar in the city, only perhaps overshadowed by the long-dead bar at Dietrich's.

All that being said, and as much as we miss Nios, I really hope this new idea takes off, and you surely couldn't go wrong with either Dave or Anthony (or both?) in your kitchen.

I should add - Dave, your espresso rubbed duck dish was in my top 10 favorite dishes in the city.

Okay, I'll bite. Where is Chef David "cheffing?"

Good question. He was at Nios, but it sounds like he's in search of a new gig now. Hopefully he'll weigh in if he's working elsewhere at the moment. . .

My only suggestion would be some sort of tapas menu. I know tapas/small plates have become so common in many restaurants in Louisville now, but considering the location and the fact that many of the diners may be pre-, during, or post-night out, some small plate offerings might be a good idea. I would think that upscale/amped up/whatever Mexican style food woud lend itself well to small plate/sharing options.

We will be having some a Mexican Tapas Menu for late night for sure. Any more suggestions???? I would love to hear from you guys.

Last I knew, he was at North End. Not a bad buy for anyone concerned. He plated up a beautiful birthday dinner for my dad a while back. Awesome experience.

*Editted to note* ~ this is my 600th post! Will somebody PLEASE give me my own talk show now?! Or an LHB t-shirt?

My restaurant Seviche is not changing or anything, just thought I could go back and fourth, since Tequila Factory will be just down the road. It's not cursed! Just needs the right person running the place.

Chef ... I would be such an honor to work with you and learn from the best.

Hey everybody!!! I finally got my computer up and running, I was having some issues with it. I see that my husband Adrian has kept you posted of what's going on in the old Nio's location. Of course, I would love to hear suggestions. Mexican Tapas is defenitly a must considering the location and the late hours. I would be adding some South American/Caribbean and of course most of the taste will come from my home country Ecuador. :D
