Danny Mac's Pizza - Update

Update

After crunching numbers for months, I finally had to make some moves that might sound crazy but I had to do it and I wanted to let you guys know about them.

The most important one is pizza delivery. Most of my business is from carry-out. Probably close to 75%. I basically was paying a delivery driver to stay here all day and during 5/7 of the week I would get an average of 6-10 deliveries. That pretty much cost my store about $10-$11 for me to send a delivery out. If the order was $15, I doubt if I even broke even and sometimes I lost. I hope you understand that I had to make a change and I"m sorry if I can't deliver to you anymore during the week. Friday and Saturday are usually better and more of a traditional pizza delivery day in my eyes so I'm still delivering on those 2 days. I'm working on some more carry-out specials to help save the customer money and make it worth the drive over. (save money on the food and no tips to a delivery driver too). Heck, we all need to save.

Basically I have always tried to improve my business over the last 3 years I have been open and I'm proud of all the hard work I've done. I love my job and I want to be able to cook for you guys for a long long time.

The other thing is a new pizza. I was always curious about the Margherita pizza and the tradition behind it. I have been working on one for months and I think I have it the way i want it now. While tinkering with it, I fell in love with the Roma tomato and the way it looks on my pizzas. I replaced my diced tomatoes for these sliced roma tomatoes. I think you will like them a lot better.

I bet a real Italian person would beat my ass for making the pizza like this , but I've always done stuff my way and I love the way it tastes. Sliced Roma tomatoes, fresh basil leaves, a blend of Italian spices, and 3 cheeses.I make a couple more trips a week to the produce place, but I think it's all worth it.

This is the pizza I crave from time to time, and when there I order it at Amici's. So it will be great fun to get one of yours on my drive home from work!

Thanks for the update Danny. Michele and I have no problem picking up our orders during the week. All of your items are great and I'm sure the new pizza is no exception. We have been regulars since you opened and have never had a bad meal or an issue w/ anything.

I'm sorry. I should have offered. I will be happy to deliver pizzas for you. How many actually have to get to where they need to be? What if they, uhhhh, get lost in transit?

I would never ever change that sandwich. I eat 3 a day. I think it's got all the daily nutrients a young man needs. I have been thinking about adding some options to it though. I've tried it with pizza sauce, cream cheese(after the write up), BBQ sauce, horseradish sauce, cheese wizz, etc. What would you do if you were me and you wanted to add a couple options to the sandwich?

I love these new boneless wings I have now. I've had them for about a month or so now. I keep messing with them and I love the way they taste with our BBQ sauce, our hot sauce, and this new sauce called sweet heat...mmm, but my favorite is when we put garlic butter on them with Parmesan cheese and Italian spices. We call them "crackwings" or garlic parmesan wings and it's very hard to stop eating them.

I like the pizza sauce idea. I think an option for another type of cheese like all provolone or maybe cheez whiz. Banana peppers or poblano peppers could add a zing to it, or perhaps a spicy mustard or horseradish... something spicier is the general direction I'm going.

But din;t get me wrong, it's nearly perfect as it is.
