Blintzes?

As I was channel surfing the other evening I saw a short bit about Moscow. In it they mentioned the prevalence of blintz kiosks all around the city. Just a little stand equipped with a couple of round, hot griddles and a few little refrigerators. You could get a blintz filled with something sweet or savory. Roll them up, wrap them in a bit of foil and you're done. A cheap, fast, hand held dish. This seemed perfect for downtown Louisville's lunch traffic or someplace on Bardstown road. A grab and go sort of thing. Has anyone thought about or done anything like this?

I wonder if there's enough of an audience for blintzes in Louisville to make it happen, Carla. The Kolache Factory was darn good, and it didn't last a year. For it to sell, people have to know them and crave them.

Still, street-food stands for eat-out-of-hand goodies are great, whether it's hot dogs in New Orleans or bureks in Ljubljana.

Just came from a fabulous Russian wedding in Brooklyn, and instead of crepes table side they were browning blintzes. I think either crepes or blintzes could work in a heavy foot traffic area. It just takes someone with means and imagination to pull it off.

BTW, you can buy blintzes frozen in Kroger, and the International star grocery in J-town.

I just thought it would make a good fast food option. Kind of lighter that most fast food. Could be cooked to order and still be speedy. Not a big investment in equipment. And to Robin's point it would have to be in a high foot traffic area. Maybe around the courthouse. Just thinking out loud.

I think a crepe stand would be more popular just because the product has more name recognition.
At farmers' markets around the country there are often crepe sellers- perhaps one might be successful at Bardstown Rd or Beargrass.

I agree with all your comments except for "kind of lighter" . . . my mother's blintzes were light as air, but just had Corky & Lenny's (in Cleveland) blintzes this past weekend and - while wonderful and delicious - you can feel the splash as they hit your stomach!
