Highland Coffee also does this but their coffee is roasted by a secret roaster & is shipped in from out of town and then packaged in Highland coffee bags.
As a coffee roaster myself, I obviously believe the roasting process is extremely important. I also believe in full disclosure, and feel that every coffeeshop, especially ones that claim to be "local" should disclose where they get their coffee from (i.e. who roasts it). As a coffee conniseur and geek, I can't believe customers don't demand it. In fact, they should be PROUD of who is roasting their coffee, and if they can't brag about their roaster, then maybe they should be finding someone they can brag about. These are just general philosophical comments - I will never criticize my competitors. I prefer to look at them as friends, and truthfully the vast majority of coffeeshops and roasters in Louisville have treated me likewise, as a friend.
Coffee undergoes a long long process. I've seen fruit drying on large screens on dusty fields, the underpaid women sorting through beans individually by hand, and the warehouse storing the coffee before it makes the journey in cargo containers to the US. But once it gets here, the roaster plays a critical role. Both in determining which beans to select (a very challenging part of the job - I personally have about 30 people worldwide helping me cup various select coffees), and then in the roasting process (quite critical, an ongoing learning process that is both art plus science). Then it is up to a Barista and coffeeshop recipes to create that perfect drink. Every step is critical!!
