A "Shout Out" to Butcher's Best

With Chillin' and Grillin' season almost upon us (for some of us it never really went away) I wanted to give a "shout out" to Jimmy and all the folks at Butchers Best in Prospect (9521C Hwy 42).

Talking to Jimmy Kelly yesterday he acknowledged that the winter has not been any more friendly to them than it has anyone else. So they are looking forward to an increase in business as the weather warms up. Jimmy is a very modest person and claims to just run a "neighborhood butcher shop" but as several people on this forum can confirm Butcher's Best has some GREAT meats. It is an easy drive and WELL worth the trip out to Prospect when you get the Jones for a great cookout. These are friendly folks who will go out of their way to make sure your needs are met...So while you are all in the process of supporting Louisville restaurants DON'T forget to support this wonderful shop.

I second their meats- everything we've had from them is great and they readily do special orders/special cuts. I had a pork loin cut for rolling & stuffing there and it was wonderful ( and no extra charge). I have not tried them, but I'm sure their prepared foods are fantastic now that Dave Clancy is in the kitchen.

For those of you not so familiar with Prospect, Butcher's Best is right on 42- no more than a couple of miles ( if that) from the intersection of 42 and the Gene Snyder. It's a really easy shot off the hwy.

We went there this afternoon i got a beautiful Ny Strip it was fantastic my wife got a spinich & Feta stuffed flank steak it was very good

Second the prepared food improvement with Mr. Clancy in the kitchen. If they have the pulled pork BBQ sandwich on at lunch grab it up. It has a smoky bite to it that is addictive. Nicest folks in the biz, too. Keep an eye out for good flat iron steak coming into the grilling season. I've been pestering Jimmy and he reports any day now it will be in.

Wow...thanks for the kind words. I should also use this post for shameless promotion and say we are grilling out pretty much every day so if you want a groovy custom burger or house made sausage, come get it and say hey. Dave

the first time i went in i was headed for making braised short ribs, i asked for 3 bones, remove 2 and roll em up and tie em! point being, that's customer service! the night was great!

For those of us who don't live out that way, don't forget a long time butcher shop in the Taylorsville/Waterson Expwy area Kingsley's Meats Deli and Catering 2701 Taylorsville Road 502-459-7585. They have a great selection of meats, deli items, condements, and hot foods for carry-out.
Jeff Fisher and his staff are great on suggestions on how to cook thier meats and seafoods.
Best beef around. They do a great job catering too.

Confirmed with Jimmy that today is the day the first shipment of Flat Iron steak hits Butcher's Best. IMO one of the best all around cuts for the grill. Steak chimichurri here we come!

We ran a rack of Jimmy's ribs v.s. a rack of Kroger's ribs through the smoker on Sunday. Also had a new brisket marinade I wanted to try before the next competition, so rather than doing an entire brisket I marinaded a flat iron steak and threw it in with the ribs. OMG, best meat I've had in a lonnnng time.

So check this out...next time I do the flat iron I'm going to cook it until it's falling apart tender and then use it to whip up some smoked beef enchiladas. Yeah baby.
