Please help me find this pizza!

In the tiny town of Geyserville , CA at the top of Sonoma valley -a place sans stop light and gas station- we found the most heavenly pizza we've had in the USA. The equal was in Lugano..same wood oven, etc. Anyway, the chef is italian and worked in Italy for 7 years. Every pizza is hane tossed. Our Margharita had a deliciously thin crust with the thicker toasted outer edges, fresh basil and a pile of buffalo mozza positioned perfectly. The wood oven is positioned where you can watch your lunch being constructed. Ahhh. We went back twice for this divine pie.

Not that I've had the good luck to run across. Primo probably had the closest rendition in Louisville but, sadly, they are closed. If your pizza jones is strong enough to justify a weekend road trip, Spaccanapoli in Chicago is worth the drive.

It's not wood oven, but since the closing of Primo, the pizzas at Caffe Classico come closest to the authentic Italian style (as opposed to NYC-style) of any place in town.

Robin, I've never seen you mention Cafe Classico's pizza before but I am glad you did. Will have to try it soon as i loved Primo's.

OK, don't beat me up too bad, but Bravo (near Oxmoor) at least had a wood-burning oven, and offers a variety of pizza's and "flatbreads" which at least look similar.

Neal, obviously the lack of a wood-burning oven makes a difference but Tommie at Caffe Classico got the recipe and the style for the pizza from a Bosnian guy from Sarajevo. I've discovered to my surprise when traveling in the former Yugoslavia that they've pretty much adopted the traditional Italian pizza unchanged, and Caffe Classico's remind me very much of pizzae experienced in Italy. (The "flying pizza" on the old forum header was one of theirs, by the way.)

"pizzae" Dusting out the old Latin from high school for the feminine plural, eh Robin? Smooth. Very smooth.

Is the Cafe Classico pizza akin to what they have in Naples?

Let's not go too far, Phil. But it's Naples by way of Sarajevo and shows a similar style, given that it's not done in a wood oven. (I haven't been to Naples for years, to be truthful. I've spent a lot of time all across Northern Italy and eaten pizza regularly there, but of course those guys borrowed the concept from the South ... )

Robin,
Believe it or not, in Sheboygan, Wisconsin is a restaurant called Trattoria Stefanos. It is owned by a chef who learned his trade in Italy. Across the street from the Trattoria, he opened a pizza restaurant which comes the closest to what I had in Naples. He installed a Renato Oven and has cooks come over from Italy 6 months out of the year. Something about immigration laws are involved. The pizza is incredible. These Renato Ovens are something special. I came very close to opening up a wine bar - pizza place on Brady Street in Milwaukee and the Renato Oven was going to be my first purchase.

OOO..that looks good! Anyone want to caravan to Lexington? The quatro formaggio reminded me of something funny...when barging in France last year, I (mistakenly) left my husband in charge of bringing back a "Trois Fromage" to the boat. He came back with TROIS huge cheese pizzas....enough for about 10 people. Rule of travel, I talk he reads the maps.
