For Easter, does anyone prefer an off the menu meal? All I hear about is the buffet format.

I generally stay away from buffets. It's a quanity versus quality thing IMO.

My wife and I definitely prefer off the menu instead of a buffet. There are two main reasons for this preference, first the quality is normally better off the menu because the food is made fresh just before being served you instead of setting on a steam table for who knows how long. Secondly, you always feel like you have to eat more the money's worth on a buffet whereas when you order off the menu you have a controlled quantity of food to eat.

Restaurants generally prefer the buffet format for busy days like Easter, Mother's Day, etc. because they can have a greater turnover because people get their food faster. The average cost per patron is probably also higher than it would be if everyone was ordering off the menu. It is also much easier on the kitchen because they generally have fewer items to prepare.
