I stopped in for a very needed late night meal, after 11pm, at the bar and was very pleased. I continue to be surprised by the innovation and sincerity of the staff. Stacie and Leigh were marvelous with their cocktail recommendations and warm, welcoming service. I was not the only one in the bar to receive such service either, I noticed everyone in the bar being very engaged with the staff. You might expect some staff to have a stuffy attitude in a bar like Proof, but I saw nothing like that and felt very welcome there. I had an astounding grilled cheese and fries and a phenomenal champagne cocktail created by Stacie including Soho Lychee and maybe bourbon. Props to all the staff there.
