Pasta with browned butter?

by KirkHarrod » Fri Mar 06, 2009 3:31 pm

Does any local restaurants serve pasta with browned butter and Mizithra cheese like at the Old Spaghetti Facory? I know my wife would love this dish but I would rather not go to a chain. thanks!

It's extremely easy to make at home.
1. Brown some butter. Cook gently until the butterfat browns.
2. Boil pasta.
3. Toss together with a bit of pepper.
4. Sprinkle on the Mizithra cheese.

Gosh I used to make it at home all the time, but I haven't made it in years. Gotta get some cheese!

Oh, I love that dish, but am in no hurry to get to the Spaghetti Factory. Thanks for the recipe!

I had some takeout from there last Saturday. It had been years since my last visit and I needed quick sustenance before work. So, I gave it the try...

I love the facillity. It really is a cool atmosphere. You just don't see that anymore. They were busy with loads of family tables.

Standard chain food. Not bad but not great, either. I got the meatloaf, served with a side of pasta sprinkled with the Mizithra. The meatloaf was tasty. The pasta was cooked well. But that cheese was highly processed, to the point where it didn't break down with heat, like margarine. It looked like gerbil turds, for lack of a better descriptor. A bit off-putting texturally and visually, but with good flavor.

Oh yea, and the host stand made fun of a developmentally challenged man when he left the building. Many of us in the industry know this fella. He is a nice man who stops by, from time to time, looking to get a gig playing jazz. We used to give him free sodas and waters to enjoy on the bus at Varanese... the band loved him. He is a great guy that is playing the hand life dealt him. Count your blessings, jerks.

I may never return.

EDIT: I almost forgot... Leah, would you mind letting me know where you are sourcing the cheese, so I can go grab some myself? I liked it a lot and would love to try some as it should be, texturally.

The more I thought about it, I realized that I haven't made that dish since we moved into this house. That would be about 12 years. And I used to get the cheese at Kroger. And it didn't melt, either.

I've made this dish several times and usually hit Lotsa Pasta up. Will even pointed me in the right direction on an additional cheese to make it even better, which worked wonderfully. He will hook you up.

Unfortunately... That is Colleen's favorite dish in the world! It doesn't matter to her that I'm a professional chef and can probably make a much better version of this at home. Once a year, at the end of May on her birthday I get coerced into going downtown to let her order this dish....Like Steven said, I think the atmosphere has more to do with the experience than the food does...

That's not necessarilly a bad thing. Just maybe not over warm pasta. I have had a nice idea swimming around in my head- marinating cheese in fruit and nut compotes. Mizithra may be the candidate I am looking for.
