How many Louisville-area restaurants source local meats? Is there also a shortage of slaughterhouses in KY?

I don't know about slaughterhouses, but there is a severe lack of chicken processors in Kentucky for all the farmers raising chickens. Also, know why you can only buy whole or bone-in parts of chickens- no boneless breasts which is highly desirable from a consumer point-of-view ? It's not because the farmers don't want to sell them- it's because there is no one ( literally) who will process them for them.

At one point UK had a mobile chicken processor that would visit farms. A few of the chicken guys I knew said it really never took off because it never went mobile and required folks to bring birds to it.
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

We get our Buffalo from KY Bison Co. Raised one mile from the restaurant and they are slaughtered in Memphis IN. Too bad they have to make the trip to Hoosier land to die. I also know that the plant in Memphis slaughters for Fox Hollow Farms.

Wow, I need to read closer- for a minute I was outraged! I thought you said they had to send the "local" bison to Memphis, Tennessee to be processed... :oops: :wink:
