Rich O's "refrigerator pizza" - please enlighten me

by Marsha L. » Sun Feb 08, 2009 12:05 pm

Hey, on my "Let's Convince the Travel Channel to film No Reservations in Louisville" Facebook group, in a discussion thread about where to take the crew when we've got them convinced and in town, someone posted that "Rich O's refrigerator pizza is a must".

I've only been to Rich O's once, and I absolutely loved it - beer, atmosphere, and great great pizza, but - I don't remember anything about "refrigerator pizza". I tried to run a search on HotBytes, but all I got was a bunch of threads with the word pizza and the word refrigerator in them - you can imagine (and yes, I did run the search with quote marks around the phrase, but I'm pretty sure the search engine just ignored them).

So, Roger, fans of Rich O's - what's "refrigerator pizza"?

(thanks Josh)

Essentially, it's just using the thin crust dough in the deep dish pan. Lining the deep dish pan with the thin crust dough renders it into something like a pie crust that holds in the ingredients: Anything the customer wants, and roughly twice the cheese as any other style we do. It works best with multiple ingredients, say 4 or 5 toppings rather than just one. Otherwise, all that cheese can be a bit much, even for gonzo folks like me. It's the hardest one for the kitchen people to make -- takes some practice to get it right.

Does that help?

I normally have a difficult time getting anything but the calzones, because they are simply so delicious. However, as soon as you said "twice the cheese" I was instantly sold. Looks like I'll be crossing over the mighty Ohio sometime very soon.

Thanks ... Louisvillians are always welcomed on the (purportedly) Sunny Side. Just don't visit us on Sunday, when the doors are locked.

I unfortunately made that mistake one time when my parents were in town. :? Next time they come up on a Saturday though, we're going to have to hit NABC for lunch.

The refrigerator is alright but the Upside down is the signature pie in my opinion.
I am the original Mike G, never mind the impostor.

I am kind of a big deal.

Second that. I've never been one that gets very up in arms about any pizza, but oh boy the upside down really gets me going.

The upside down pie is deep dish and rectangular, with the toppings somewhat reversed -- the sauce is on top. It's all about the thick crust. Thanks for the kind words, everyone.

I'm going to have to put in another vote for the upside down pizza. I can't even quite describe the happiness it brings me.

Ditto. Im generally unaware of anything else on the menu, I always get the upside down pizza.

Also, the beer cheese is spectacular. All other sauces with pretzels and/or breadsticks are completely unnecessary. Does anyone else in town serve a decent beer cheese? The few places that I have tried one all fail compared to NABC.

Mm. Yeah, the Richo's beer cheese is great - nice and spicy. I haven't come across a beer cheese even close in the area. The only other place I can name off the top of my head that has it is Cumberland Brews, but theirs is more of a spread and is served cold. I'm not a fan, though I have friends that love it.

Upside down pizza with double spicy italian sausage and beer cheese instead of the red sauce. Nothing else comes close, especially with a couple of pints of Hoptimus.

I have always enjoyed the beer cheese from CPC. Worth a trip out there if you have not already been.

And the short one wants four whole fried chickens, and a Coke.
