As a big shout out to all of us in the trenches this week. "GOOD LUCK AND TRY NOT TO WORK TOO HARD".Remember; That as the people behind the scene...Ultimatley our job is to put smlies on faces and most folks are happy to be here for Derby..This is why we do what we do......

Try, being the key word.

Come Derby time, it always feels like it's gonna be worse than it really is.
Everyone psyches themselves up about how horrible it is...
but once you're in the midst of it... it really is pretty fun.
pure energy, execution and orchestrated chaos.
You really hit that high when you're behind the line 'doing the dance' (if you've ever cooked for a living... you know exactly what i mean.

And come Saturday night, after service... you're exhausted, glad it's over... but feel so fulfilled and purposeful.


...and need a cocktail (okay - several.).






...so where is the post-Derby cocktail meet up for us restaurant people?

I put vegetables in your desserts, white chocolate with your fish and other nonsense stuff that you think shouldn't make sense, but coax the nonsense into something that makes complete sense in your mouth. Just open your mind, mouth and eat.

Yeah, and I have to make beds too!

Seriously Derby is a great time to be in the hositality biz and to showcase our gret city to visitors. As a B&B we get time to talk to guests and cook for them, plus clean the hosue, make their beds, and put in fresh towels when they're out having fun.

One day down...One more to go...I thought I've been through some things in my time, but there is always another surprise around every corner in this business...Needless to say every one I fed today "Loved It" but they have no idea what it took to make it happen. How can you maintain the level of expected service when you lose a dishwasher(the Kingpin), Three bartenders(one walked out ,one got fired and one just didn't show up), and most of the kitchen staff were on the cusp of a full fledged revolution(another story altogeather)...Please grant me strength..I really just want to make everyone happy!....
