Come Derby time, it always feels like it's gonna be worse than it really is.
Everyone psyches themselves up about how horrible it is...
but once you're in the midst of it... it really is pretty fun.
pure energy, execution and orchestrated chaos.
You really hit that high when you're behind the line 'doing the dance' (if you've ever cooked for a living... you know
exactly what i mean.
And come Saturday night, after service... you're exhausted, glad it's over... but feel so fulfilled and purposeful.
...and need a cocktail (okay -
several.).
...so where is the post-Derby cocktail meet up for us restaurant people?
