Danny Mac's Pizza

by Danny Mac » Thu Jan 22, 2009 2:02 am

On January 1st, I changed a couple things on our menu.

One was the size of our pizzas.

I used to have 10" and 14" pizzas, but I switched over to just a 12" only, because it works better for pricing reasons.

The other was the quality of our hand-tossed pizzas.

I used to cook them on a solid pan and sometimes they just didn't cook right all the time. Sometimes the dough was not cooked all the way through. I switched over to cooking them on pizza screens and now every pizza cooks all the way through and I love the way the bottom of the crust comes out now.

I feel good about these changes and I hope you do too.

That sausage, mushroom, and banana pepper pie is among the best of had. We love Danny Mac's!

I dunno how it could get too much better, but we won't just take your word for it, Danny - we'll just have to order from you again soon :)

We use the screen pans at Lou Lou and it does make a world of difference in the bottom of the crust.

I'm going to have to side with Marsha on this one. I'm unwilling to take your word for it Danny, I'm going to have to do my own investigative research very soon!

ive worked in places that have used the pizza screens, and Ive worked in places that use no screen, directly on the oven surface. and I have to say I prefer the no screen pizza.

"Decking" the pie after it has had a chance to set is easy to do Rob and you'd hardly notice the difference. From an operation standpoint though, building the pie on the screen and tossing it in the oven is a lot easier then building it on a peel and sliding it in.

I see from your website that you offer delivery - what is your delivery area? We are in the upper Highlands near Atherton and are always looking for delivery options other than the usual suspects. Happy to be able to add Cafe Lou Lou to those options - now if we could add Danny Mac's...

I just had a chance to try the new cooking style with the screens he is using and I must say it was excellent. We don't get it as much now that we moved, but it's always my first choice. The sauce reminds me of the first Impellizerri's on Bardstown Rd., and I always get a few sides of it to dip my pizza in. Dan is a really nice guy, even threw it some desserts for us last time we got carry out! Definitely a great local spot to try out.

Danny Mac's taught me not to fear the words "Chicken Bacon Ranch" Pizza. That is an incredible pie.

If it has ranch on it it is NOT a pizza, it's an open face sandwich.

Don't try this at home, kids. I call my dog "Squishes. You call your pizza "sandwich". Now everyone can play.
