Today I noticed that a new restaurant is going in at 5th and Market, between TC's Sandwich Shop and the Delta. I can't remember the exact name, but it has something to do with Chopped Salad. It may be http://www.choptsalad.com.

I think the website is http://www.greenleafchopshop.com
The location on the website is Beverly Hills, and it doesn't say it has any other locations, but from what it looks like, this is what's coming.

It sounds kind of strange that a restaurant whose only location is in Beverly Hills would be opening their second location in Louisville. I think a more likely scenario is that we're going to get a knockoff of the two restaurants discussed above. The concept does sound interesting though.

they have a concept like that with a lot of shops in Manahattan... it's called Pax... I don't understand the concept.

scroll down to page 14 for concept. I have had soup and sandwiches there before, and the food is good, but I just don't get all the chop machines and choices, etc.

No one here reads broken sidewalk? its the citys development bible. has pics and the website. sounds like its a local knockoff of a national trend. i have seen all these salad shops in the big cities.

Wow. My husband used to have to travel to Cincy (if that is even considered travelling) for work and he used to rave about a salad place in the Westin hotel downtown that was always packed. It's called Ingredients. The concept was that you picked a type of lettuce (field greens, romaine, iceberg, etc...), then picked a certain number of other things (cucumber, tomato, etc...), picked a dressing, and an optional meat (or tofu). It seemed like a very interesting concept..... a made to order salad. However, if they were going to bring in a CA lunch chain, couldnt they have brought in a Souplantation?

Just chiming in to say I read brokensidewalk daily. If you care at all about architecture, history, development and transportation issues, there's no better coverage of the Louisville area than on BS. Good stuff.

And yeah, the salad shop trend has been national for a while now, I can think of many places in Midtown Manhattan and in the Loop in Chicago that do this. It's a pretty worthwhile thing, glad someplace doing the same will be here soon!

This cracks me up! When I opened my cafe (now deceased) my idea was a good selection of meats, cheeses, veges, breads and dressings from which you could pretty much make up your own sandwich, salad, wrap, etc. We had a variety of pre thought out sandwiches (one of my favorites was the cajun club: cajun turkey breast, pepper jack, romaine lettuce, tomato and red onion on whole wheat with cajun ranch dressing (our recipe)). Although a few people created their own sandwich or salad, I would say 85% of the public would pick something already laid out for them. We even got to the point where we would make a sandwich or wrap of the day. Weird.I think a choose your concept is a great idea! I also think there tons of people who can't make up their minds or have no imagination. Go figure.

Ooh if it's really the Chop Shop listed above, I'll be happy. As a lover of salads, wine and environmental consciousness, this place is right up my alley. It definitely seems pricey, but a good treat.
