Best Lobster EVER at Seviche

by Linda C » Sat Jan 10, 2009 12:05 am

I have been a fan forever. When at Seviche, I'm always torn between ordering all the things I know I love or trying something different. Tonight, I had the Lobster. Server explained that it was fixed outside the shell or something like that. All I know is that it was the tastiest, most tender lobster I have ever had. The dipping sauce had coconut milk in it. Every bite was saucy and juicy, not dry or mushy like some places. (btw...I had lobster at Jeff Ruby's and it did nothing for me) The macademia rice was delicious, but the "crispy spinach" was addicting. This is one way to get your kids to eat spinach! What a meal. My husband had the sea bass which was delicious. I have many favorite restaurants in this city, but no one has better flavors than Seviche.

I think I could sign on to that remark, Linda. This city is blessed with a better-than-average ration of great independent restaurants (and it's up to us "foodies" to support them through the recession). But Seviche is mighty hard to beat for flavor!

It is in fact a deconstructed whole lobster. We do a Peruvian twist on it. It is another example of the Asian influence to Peruvian cuisine. They introduced woks and this is done this way. They call them chaufas and it's a type of "fried rice" dish, but we actually serve the whole lobster on top of the toasted macadamia rice, whitch has been cracked and cleaned and tossed in a ginger-chile paste with sesame, lime and soy and then put back together for a beautiful presentation and easy acces to the meat. I'm glad you enjoyed it and we appreciate your support during this difficult time.

As always muchas gracias y buen provecho!

Seviche is my favorite too. We were there last week and everything was divine as always. They were out of the lobster though! I need to get my mother in law there for that dish.
