Shrimp and Grits

by Steve Bryant » Thu Nov 20, 2008 2:46 pm

Need your opinion again. I had a Lady prison employee contacted me at the restaurant wnating to know if we sold Shrimp and Grits. She moved here from Marion, South Carolina and some how found out I was from the Myrtle Beach, South Carolina area. I am not selling it at this time but have considered it. I know how to prepare it because I was raised on it but things are different up here. I know there are a few places in Louisville that sell it but there are different ways to do it. I am going to put it on the menu but I would like to know what these folks up here expect before I do it. If cook it like I did down there, I use yellow stone ground grits, country ham and red eye gravy. These folks may be used to seeing white grits who knows what else. If you've had up here, tell what it looked like. Thanks.

Just take yourself over to Cafe LouLou. Their's is good. Wait - is grits singlular or plural? Their's are good.

And grits are white. At least in my house.

Jack Fry's does a really good Shrimp and Grits. I recall that they use white grits. You can google and find the recipe and write-up's.

Can't vouch personally for the dish (shellfish allergy), but one of our clients loved the Westport General Store version. From their menu:

Red Eye Shrimp- Sautéed shrimp wrapped in Finchville country ham served atop creamy Weisenberger grits and a side of collard greens

Seem to recall that they might have been yellow grits, but since it was not my dish recollection is faint at best.

Steve, I'm sure you don't need a recipe (btw, I was born in the hospital at Parris Island, dad was a D.I.). Our recipe was published in the C-J not so long ago: http://www.courier-journal.com/blogs/fe ... grits.html - for the adventurous home cooks.

Yes, we use white grits at Lou Lou. Frankly, I think either type is fine. Ours are instant. I make another version at home with Weisenberger white grits and coldwater prawns with tarragon beurre blanc.

I had a friend not from the south and I took her out for breakfast years ago. At the restuarant the waiter inquired if she would like grits with her meal. Her response was, "I've never had them before...I'll just try one grit and see if I like it."

When I was a kid in eastern Kentucky we used to sell subscriptions to Grit Magazine.

Bring on the shrimp and grits!

I use those but they seem to take 40+ minutes to soften up. Is that about right?

Don't overlook the Shrimp and Grits at Science Hill in Shelbyville. I think they easily best the Shrimp and Grits Served by Jack Fry's.

So Glad you said Sciene Hill-I get so scared to post since I am friends with Ellen and The Gills...but, we were there yesterday-I had the Cream of Cabbage Soup which was so rich and delicious as well as a side salad with their chunky homemade Blue Cheese dressing while the three other guests had Shrimp and Grits. My friend Margie was done with hers within 15 minutes while our Moms took a bit longer but all three plates were empty. Our lunch was lovely and all purchased menu's!

Yes, yummm, but...Since neither Will or Steve was at the last Throwdown, just wanted to make sure you know that there are not typically cooking/warming/reheating facilities at the location, so we'll want to factor that into our choices- both for food and for location.
