I would love to know which brand of Absinthe they're poring. I've only seen a couple brands available locally but if Proof is bringing in any one of the better labels from France (preferably from Jade Liquors) I'd love to celebrate the green hour with them.

Ditto that. I love that it's finally legal (again) to chase the green fairy here in the states.

Also - what Proof calls Death in the Afternoon (absinthe and champagne) is called an Absinthe Hemingway in the Czech Republic (the reason should be obvious).

Full disclosure-I am affiliated with Proof-but I asked the manager and they are serving Kubler absinthe.

It's good stuff. One of the original Swiss distillers.

I find the Yacht Club very appealing. Campari and Gin make for very good friends!
