Corbett's duck confit porridge

The wife and I met for drink at Corbett's last night and was treated with a fabulous Duck Confit porridge. It had reduced apples and was topped with an apple cider foam. All I can say is Wow! Thanks Dean and Chef Howerton for keeping my taste buds alive.

It's nice to see they are sneaking molecular applications into dishes that don't come out of pantry...

Willy Will, thanks man! That was one of the brand new dishes, and we simply love it. Glad you picked the right night. Down home with a big flare! Cider Foam was good eh?
