Primo's Pizza chef (Where's Willie?)

We dined at Primo on Saturday and had the wonderful pizzas one last time. :( :cry: The Nicola was my daughter's fav and she would love to be able to have it again. (I will be craving the Venezia, my husband, the Puglia.) If anyone knows where this guy ends up, please post. I know that Nicholas Lynch is going to Asiatique, but I dont' think he was the pizza chef and, if he was, I don't think we will find pizza as an addition to Peng Looi's menu.
When in doubt, add more wine.

You need the wood fired pizza oven to go along with the chef. BTW who else in town has a wood fueled pizza oven?

I could do with one of those anchovie pizza's.

does anyone use a coal fired oven round these parts??

I don't think coal ovens ever made it this far before they were done away with. Very few are still being used. The ones that are still being used were grandfathered in.

The old Harpers, Amerigo? -- They have a wood fired oven I believe. It may be completely gas, or gas assisted. I know it is open with a large stone deck and when it was Harpers they did a nice thin crust pizza. I'm not sure if that is still the case or not.

Also, the Woodstone Oven website says that at least two chains in town have their ovens.

Scott, is that definite about the coal fired ovens? We've got them down here in FL and they make really really good pizza...

Robin? Doesn't your backyard need a wood-fired oven? Next house I get, I''m building one in the back yard. No joke.

Nicola - pepperoni, fresh mozzarella and tomato sauce
Venezia - baby smoked shrimp, fresh spinach, parmesan and garlic butter
Puglia - goat cheese, roasted garlic, olives and sundried tomatoes

Hey, Barb! I might have to persuade M, but I could get used to that idea. Or better yet, one right in the kitchen, like Primo had!

I know Blu's is gas powered, and Proof's is gas assisted....as far as I know Primo had the only pure wood oven in town...

The old Wood Oven Pizza in Plainview had one, years and years ago ... it's been through many changes since then - now Slice of NY - but I'm pretty sure they're back to a standard vertical NYC-style pizza oven.

Bravo, over by Oxmoor Mall has a 100% wood-fired pizza oven.

I know, because i worked there (and the oven) briefly when they first opened.
(oh, what a long way some of us come... :wink:)

SO what I've learned is there is still a pizza market to fill here. A wood fired pizza oven market.
