I wish we had a mellow mushroom here. Amazing pizza for a chain. Quality ingredients and lots of beer on tap.

Pizza Today magazine (published right here in Louisville) does several Top 100 lists for the pizza industry every year.

Right now, you can look at two of them at http://www.PizzaToday.com:
*America's largest pizza franchise and
*America's highest-grossing independent pizzerias

When I was there (1990-1991), we also did a Top 100 chains list.

Mike, have you been to a Pizza Expo? I did two of them (1990 and 1991) for the company. I was the "registrar", the person in charge of processing and handling all the attendee registrations and all the exhibitor badges. In Vegas in 1990, we had about 4,500 attendees from literally around the globe (Iceland, Chile, Korea, Australia, and everywhere in between). Back then, we had 600 exhibitors with an average of 4 people per booth. It was a pretty big deal back then.

No I havent, I dont even work in the industry. I am a huge pizza fan. I kick around the idea of opening my own pizza place from time to time but I have zero know how on the financial side.

Re: Donato's. I think they're still trying to recover from the period where they were owned by McDonald's. The founders bought the company back and they are getting the concept back on its feet before they try to expand. I've eaten at a Donato's in Somerset near Lake Cumberland. You're right, it isn't bad.



I'm not sure if Donato's can come to Louisville . . . there was a law-suit a while ago about the tag-line "edge to edge." Either Papa John's or Pizza Hut started to use it, without realizing (or caring?) that Donato's had it trademarked (and that their pizzas are truly "edge to edge" for toppings). A fair amount of money changed hands, but if I remember one of the results was a limit on where Donato's could use their line and where they could expand.

Don't know if this is still in effect or not . . .
