Smoked Cheeses

by Steve Saks » Fri Jul 04, 2008 11:23 am

Where, oh where can I find some nice smoked Cheddar or Smoked Mozzarella?

Is there anyplace here that smokes cheeses? or Meats?

Thanks,

Steve (Now, in office Member mode!! No more lurking for me...)

If you go to Whole Foods, try the Rofumo Loaf. Sort of like a smoked gouda, but a much creamier texture. Good stuff.

I threw a hunk of Parmesan rind on the smoker while I was doing some pork shoulder and was quite pleased with the results!...

For the 1/4 lb. chunk I just put there for Sh!^t's and giggles; I've been pleasantly surprised by the depth of flavor that permeated the entire piece of cheese....

I've been shaving pieces off for a couple of days and it gets better all the time!

Unfortunately, I'm down to a thumb sized piece now and wont be smoking any meat for a week or so!

My name is Paul and I am in charge of the BBQ and catering at Frankfort Avenue Beer Depot and Smokehouse. Although we do not have smoked cheese on the menu, we would be glad to smoke some for you. If you ever need cheese or any meats smoked give me a call at the store. We have a lot of customers who bring up their own products to be smoked. You can even choose the wood you would like. I use hickory, oak, cherry, or apple. We have daily smoked specials. The smoked salmon (Bluefin) on Wednesday is awesome, it sells out every time.

That sounds like a really cool gesture to me. Is that really such a regular practice? I love the idea but wonder how silly I would feel showing up for a beer and smoker. No worries from me, really, cause I have friends that love joining me at the beer depot for brews.

This is a regular practice, the smoker is always going so it doesn't hurt to through some extra stuff on it. I like to smoke all the time, and almost anything  Next time your in for a beer, try some of our food. It is some of the freshest stuff you can get anywhere. Food goes so quick, we almost never have anything for more than one day.

That much I know (the part part about everything being really good). Thank you for the info, and I will definately be in for a smoking (not to smoke me, exactly [albeit that would be a tasty dish] [did I really just say that???] ).

Dan,

The smoked Parm sounds really yummy! How long did you leave it in the smoker to get the results you liked?
