Best omelets?

One thing my wife and I love are omelets. What are some good spots in Louisville for them?

How do you like your omelets? To me, that's a big issue. Lots of places make great egg dishes, but for a true, French-style omelet in the bistro tradition, I pretty much stay home and make my own.

That said, certainly Wild Eggs, Lynn's, North End, Cottage Inn and many, many more local favorites make a fine eggy dish, fluffy and filled with goodies, and I'll chow down on any of them on any given day.

But call me a fundamentalist, a true omelet is a very specific term of art, and the many variations strike me like variations on the martini do some people around here.

Wow, the first two replies, and two mentions of Lynn's. I've never been fond of Lynn's; I had one good meal (pancakes) and then two bad (an omelet and some "Thai" chicken monstrosity, which was actually one of the worst meals I've ever had in a restaurant anywhere) when I first moved to Louisville, and so stopped going, even though they are quite literally just around the corner from me.

Recently I decided to give them another shot because they are so close and I was hungry and didn't feel like driving far. Plus, I'd likewise had a bad experience at Kashmir when I was first in Louisville and have since found them to be an excellent place, so maybe I'd misjudged them.

Well. An omelet is not scrambled eggs with things thrown in. Especially if I'm paying a premium -- and $10 is a premium for an omelet -- it should be done correctly. It's something any cook should be able to do; hell, I can do it at home, and I'm pretty far from a cook, more like an enthusiastic amateur.

Plus, if you're going to go on about the special cheese that's in your omelet, there should be a noticeable amount of said cheese in it.

Contributing to the topic at hand, I really like the spicy omelet at Karma Cafe when I can convince them to not overcook the hell out of it, and I've had some great omelets at the Waffle House on Blairwood.

Amen and tell it, brotha! I'm still paying off the $40K I borrowed to go to Sullivan, and they weren't even going to teach us to make a French omelet! I went in on a PlusFriday (free time with instructors, no structured class) and asked to be taught. The fold. The slit for the fillings. The beauty of a perfectly cooked egg that's not overdone. Ahhh.

I often think that if I am ever in a position to hire cooks for a restaurant, I will ask each applicant to go into the kitchen and boil me an egg. Not to trash my own alma mater, but my guess is that 90% of Sullivan graduates wouldn't be able to do it to perfection (almost EVERYONE overcooks them).

Then again, Sullivan recently sent me an invitation to a "reunion", cost being $125 PER PERSON, and the frickin' thing had this printed in giant red letters at the top: "YOUR INVITED".

My invited what? Oh, God.....the shame. I hope someone lost their job over that.

Omlette making should be the interview, if the "chef" can create a perfect omlette (sans the brown coat), then they should be hired! If they can do that, they can do anything!

I've had wonderful omelets at North End Cafe and Blu at the Marriott downtown. I also like the omelets at Waffle House.
Great food along with great company is truly one of lifes best treasures.

I agree with Robin - if I want an omelet, I'll make it myself. been disappointed too many times when ordering them outside. My kids all love them so much they call them "mom-elettes" and now that they have families of their own, I've given them all omelet pans, taught them the secret and they now make "dad-elettes".

I myself enjoy the omelets they serve at Waffle House.

Most of those cookies know a thing or two about filpping an egg...

Can I have a double order scattered, smothered coverd and chunked to go with that as well?

Can you fill me in on your picture that goes with your address? What is that symbol? I thought snowborder, or cup of steaming coffee.
On a related note, North End wins hands down on omelette variations. So what if I work there, I can still say it. Come by and prove me wrong! But I got a wack load of stickers on Easter that feature the symbol Matthew uses on his ....como...personal caricature?
