this recipe is available in the first 'secrets of louisville chef's' cookbook. i have had success with it several times.

according to the book, part of the chimichurri is used for the marinade!

I'm dying to know what's in Palermo's chimi sauce. Every time we go, we inspect it the best we can, but when I try it at home, there is always something missing.

David, I agree. I know that Melillos has other dishes on their menu, but I always get the Eggplant Parm. I don't think I could even consider getting anything else!

It's the bestest. I've tried my hand at replicating it but like Eliza W. said, it's hard to do at home.

August Moon's hot and sour soup. Very good and different than anything I have had. Kind of smoky/sweet as well as hot/sour.

I've noticed most of Peng Looi's recipes I've seen posted call for "Hot sauce" to taste.

Any guesses on what kind of hot sauce he'd use, or what would work best? Tabasco? Srirachi?

Seems like some of the hot sauces with their own distinct flavor (Franks, Texas Pete, etc) would alter the overall taste a bit much...
