Mimi’s Ethiopian Restaurant is supposed to open Saturday (Aug. 1) at 1534 Bardstown Road, where I Love Tacos/Tacos D’Amor used to be. I haven’t been able to find a website, but Toast has the menu. It’s mostly the typical Ethiopian dishes you’d find at a place like Queen of Sheba, but there’s also a section of fusion food, including Beef Tibs Spaghetti. It’s an interesting coincidence that Mimi’s is next door to Prado 264, which serves its own kind of fusion food (Italian-Cuban).
