Byrdies vs The Exchange

Its sad to see a French concept close its doors. But I always saw Byrdies as an awkward addition to Nulu. A French bistrot with some good beers and croque monsieur options could work there. But not hyper expensive entrees with no moderate options. Oh well.

It seems like The Exchange is built for a Nulu clientele. Nulu seems to be more mobile, grab a beer and some simple, unhealthy (mainly) food and move on to somewhere else before the outing ends. Serious sit down, expensive dining works better in a few other areas of town in my opinion.

I'm still trying to get a grasp on how the overall dining scene is changing/has changed since the pandemic. I'm getting the impression that a good share of the new openings are high-end, upscale dining, quality but maybe not really cutting edge, often associated with the fancy-feel new hotels that are likely responding to bourbon tourism, but more middle--budget, interesting, chef-driven places to some extent are leaving without as many similar spots coming in to replace them. The Exchange Nulu may be one happy exception to this rule.

I'm not even sure I'm right about this, hence posting my rambling thoughts here for discussion. :)
