New executive chef at the Brown Hotel

by Mark R. » Fri May 31, 2024 11:49 am

According to an article published yesterday Business 1st the Brown hotel has hired Chef Gary Palm to be their executive chef! Prior to this he held the same position at the Trump Hotel in Chicago. Hopefully this means that the English Grill will be reopening soon!

“Chef Palm brings a wealth of knowledge and expertise to our team and his standout talent speaks for itself," General Manager Brad Walker said in the release. “We are delighted to have him leading our outstanding kitchen staff and know he will greatly contribute to the continued success of our historic, award-winning culinary program.

Palm is a member of the James Beard Foundation, and has racked up a variety of culinary accolades across North America, Asia and Europe."

Yeah. Some folks associated with the place fell on hard times.

It's been several years, but shortly after it opened we ate at the Terrace 16 restaurant (16th floor of the Tower, the main signature restaurant) and thought the food excellent but the prices astronomical and the portion size moderate at best..

They have had a lot of trouble with employee planning in the complex (Tower, hotel, and restaurant) as although the Tower condo's are around 90% sold, reputably they are less than 20% occupied, which makes it nearly impossible to plan staffing levels, food purchasing, and general management.

I only recently realized that the English Grill had not reopened. What a loss!

Unfortunately, it's pink clothes for quite a while and doesn't look like it's going to be reopening. Losing it and the Oak Room previously I've lost 2 of the old-school elegant restaurants in Louisville!
