Cured restaurant and salumeria

NuLu will be getting something that seems a bit unusual: a farm-to-table restaurant called Cured that will make its own fresh cured and smoked meats. Cured plans to open this spring at 637 E. Main St. (I believe that’s where the International Tap House used to be). Cured’s owners are connected with two other businesses that are apparently meat wholesalers — Alvio’s Cuban Meats and Lapinet Cured Meats. I wonder if they already sell their products to local restaurants.

Good catch! This might be too easy, but I have to wonder if there's any connection between the Cuban ownership and the growing Martinez footprint in Nulu.

Anything is possible, but it does not appear that the Martinez family is among those pictured on Instagram . . .

Sorry, I wasn't clear. I'm sure this is not a Martinez operation. I wondered if perhaps it's an example of Kentubano networking.

Cured will be opening Wednesday (Oct. 11). I can't find a menu online, but the website lists the kinds of cured meats they're making (speck, coppa, guanciale, etc.).
