Birria & Tacos To Go, Preston Highway

I just saw an announcement that Veronica Cortes is opening a food truck at 5020 Poplar Level, called Birria & Tacos To Go, operating Thursdays through Sundays at noon starting this Thursday the 16th.

I can vouch for her delicious birria tacos and consome (I have not tried the birria pizza or birria ramen) and having a food truck is way better than the old system, in which you had to write her a Facebook message and then go to her house, whereupon someone would bring your order out to the driveway (okay, it was fun for the novelty of it).

Anyway, I look forward to giving it a try, since she’s advertising that they’ll offer a bigger menu.

Relatedly, does anyone know if the Tako ‘N Madres birria truck is still operating? I haven’t seen it the last times I’ve been past Bardstown and Hurstbourne, and they haven’t posted on IG in a few months.

After two years, another update on Veronica Cortes: she's opening a restaurant tomorrow (April 7) at 5044 Poplar Level Road with a lot of birria options (along with fajitas, tortas, etc.). I can't view her Facebook page, but you can see the menu and hours here:

We just got back, and wow, was it ever packed. I counted over thirty customers in there! Anyway, I got the birria tacos, and they were extravagant and delicious. They take beef and braise it in a broth of, among other things, cinnamon, clove, and chile, then put it in a corn tortilla with cheese, cilantro, raw onion *and* spicy neon pink pickled onion, dip the whole thing back in the broth, fry all that on a griddle until it’s crispy, and then give it to you with a bowl of the broth to dip it in. And there is a brown-red dried chile salsa, and a green tomatillo one. It’s a very intense eating experience.

Hopefully their popularity endures, because based on that experience, it’s well deserved! So glad to see other people agree!
