True, the proliferation is more recent, but the concept is strong!


Good point, Andrew. You could add Bojangles in 1977 also. But wait! Popeye's, Bojangles, Indi's (and Chicken King, too) aren't Nashville hot chicken, are they? I agree that it's a distinction without much difference – put white bread under the chicken to catch the bright-red drippings – but wouldn't you say that the trend we're talking about is Nashville hot chicken outside Nashville, not the more enduring southern-style spicy chicken?

Yes and no! I looked at it almost like a melding of cultures, especially Southern hot with Asian hot, and blended with Nashville shades of heat! People were looking for new/underutilized concepts, saw that spicy Thai/Laotian/Cambodian/Indian/et al food was popular, looked at Bojangles/Popeyes and HattieB's/Princes, and said to themselves, "all these Asian places offer heat from 1-10, the Nashville chicken offers heat 1-5, why not start offering lots of heat levels instead of the two that Bojangles/Popeyes have" and they all did it!

A clumsy explanation that doesn't disagree with you, but I do see it as a blending of ideas into American mainstream.
